Intense nose. Violet, black cherry, dark chocolate and espresso. Very structured. Bottle age will be rewarded.
Sentinel Oak, Clos Du Lac
The Syrah portion of this wine was harvested in early September. On the crush pad the grapes were hand sorted, destemmed, half was crushed and half was allowed to remain whole berry. Once in tank the must was cold soaked for 5 days. After the cold soak the must was inoculated with a blend of Saccharomyces and Non Saccharomyces yeast. For the first 4 days of fermentation the tank received 3-4 punch-downs per day. Once fermentation got cranking the lot received 2 pumpovers every day and a delstage every other day. At completion of primary fermentation the lot was sealed up and had extended maceration for an additional 10 days. After the extended maceration was completed the lot was pressed off, settled for 24 hours and then racked to barrel. The Petite Sirah was harvest late August, on the crush pad is was destemmed and crushed and sent to tank. Once in tank the must received 3-4 punch-downs per day. Onc fermentation was cranking the must received a morning and evening pumpover and a mid day punch-down. Every third day the lot had a delestage performed. After 11 days in tank, the must was pressed off, settled and sent to barrel.
